So i’m not sure how to feel about something…
Let me set the scene for all of you and let me know if this sounds fun to you.
You’re a young girl and your brother who is studying film at UT is making a movie at the end of the summer. Sounds interesting right? You’ve helped him out with some of his other short films, but this movie is bigger than everything else he has made, so of course you can’t pass up this opportunity.
Being the culinary student you are, you say, “hey, i’ll cater your movie and help out with anything else you need me to do.” How great will that look on your resume?
Now, this movie will take probably 1-2 weeks. Not too long. The movie is going to be filmed down off of the gulf coast so of course you’ll be staying in a hotel, right? No my friends. We will be staying in a tiny shack with no running water and barely any electricity. Literally one room that’s probably smaller than your living room. This room will be filled with about 6 guys and two girls.
One week. No shower.
Let me say it again.
One week. No shower! A bunch of guys in the summer heat on the coast all sandy and no shower!
Am I the only one that thinks this will be kind of… um, gross? Call me a girly girl but ew.
I feel this will be more of a social experiment than anything when we go down. Oh help me.
Seriously though, i’m really excited and proud for my brother on this movie because I know it’ll be great! I won’t go into any details on what the movie is about until after it is done, but really it’s going to be great.
He’s got actors, a great camera, all sorts of props and visual artists helping out. How cool is that?
Anyway this for those of you interested in this ice cream, which you should be, it’s fantastic. I’m not just saying that because ice cream is my number one guilt food, my number one sweet tooth need. It really is just amazing.
Remember those mocha fudge brownies I made a couple of weeks back? Yeah, well since I had so many brownies and I love using my desserts in different ways so I can make more, I thought why not put it in ice cream? After all July is national ice cream month! And don’t forget that national ice cream day is July 21st. Hint hint, just in time!
Espresso Brownie Fudge Ice Cream
(Recipe adapted from Emeril Lagasse)
2 cups heavy cream
2 cups whole milk
3/4 cup granulated sugar
2 tablespoons instant coffee granules
6 egg yolks
Combine the cream, milk, sugar, and coffee in a medium, heavy saucepan. Bring to a gentle boil over medium heat. Remove from the heat.
Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.
Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer’s instructions. Once the ice cream is almost done add in the brownie bits, as much as you like, and let go until fully incorporated throughout the ice cream. After the ice cream is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. Garnish with chocolate curls.
