I love a good party. Bust out the apples to apples and make some delicious snacks. Now we’re talking!
And every party has to have some sort of dip. Whether it be the ever classic queso, cheese ball, or this white bean dip. It’s all welcome in my house.
Fast, easy, and very delicious! Did I mention it’s healthy too? Well it is. Bonus points people!
So whatever your celebrating, or not celebrating, mix it up with your dips. The worst thing you can do is get stuck in a dip rut.
Roasted Garlic White Bean Dip
(Recipe by Sarah Eats Austin)
1 head garlic
2 tbls olive oil
30 oz white beans, washed
1 tsp dried rosemary
1 tsp dried basil
salt and pepper to taste
splash balsamic vinegar
Preheat oven to 400F.
Cut about 1/2 inch off the top of a whole head of garlic, just enough to expose the inside. Leave the peal on. Make a foil “bowl” for it, drizzling it with olive oil so it absorbs the flavor. Wrap it completely with the foil and roast for about 30-45 minutes, until garlic is nice and soft. Let cool.
Mean while, plathe rest of the ingredients in a blender and puree.
Once garlic is cool enough to work with, squeeze it into the mixture as well. Puree until smooth, adding more olive oil if necessary.
Serve with chips, pita bread, crostinis, or however you prefer!
