Coconut Flour Chocolate Chip Cookies

I would like to add cookies to the list of foods that everyone should know how to make from scratch. I mean, really if you can’t figure out how to bake cookies then you’ve got bigger issues at hand. It’s not the cookies fault that you’re incompetent. Sure, maybe your first batch won’t come out great, maybe not even your second or third, but that’s why you have to start practicing now. You never know when the time will come when freshly baked cookies are needed.

And besides, who doesn’t like freshly baked cookies, still warm from the over? The smell of your grandmas house around Christmas time lingers throughout the air, and after, you just know no one could hate someone who can do this sort of thing. Someone who can create such a magical aroma in the house and such a delicious tiny treat that takes you back into another realm of life. Someone who can do that truly holds power.

So what’s special about these cookies, aside from your various other chocolate chip cookies you’ve been rambling on about lately, you might ask? The flour. Coconut flour is used in place of AP and the result is absolutely divine. The texture is soft and almost cakey, the cookies are delicate and crumbly but as soon as they touch your tongue they immediately melt and dissolve into a strong coconut flavor. The semi-sweet chocolate chips melt in your mouth, giving you just enough chocolate to balance the coconut out, making for a perfectly sweet bite.

And it’s coconut flour. It’s healthy, right? If nothing else it’s gluten free!

Coconut Flour Chocolate Chip Cookies

(Recipe by Sarah Eats Austin)

Ingredients

1/2 cup butter (1 stick)

1/2 cup sugar

3 large eggs

1 tsp vanilla extract

1 cup coconut flour

shredded coconut as desired

chocolate chips as desired

Directions

Preheat oven to 350F.

Cream together the butter and sugar. Add in the eggs and vanilla and beat until smooth. Add in the coconut flour and mix until combined evenly distributed and mixed (it will be thick, you want that). Add in the coconut and chocolate chips and mix until combined.

Bake for 10-13 minutes until golden brown on top.
