Tomatillo Salsa

Oh salsa. What is Texas without salsa? Dry tacos, nothing but cheese to dip your chip in, and nothing to add a little kick to your every meal.

I’ll be honest, I break some of the rules of Texans and Austinites fairly often. I don’t eat breakfast tacos everyday, I don’t have BBQ for dinner every night, or even every week. One thing I do religiously however, is put salsa on almost everything.

I’ll admit, some things don’t go great with salsa. Some things are just gross. Peanut butter and salsa? No thanks. That’s why I like making variations from the classic red salsa. This Tomatillo salsa is one of them. It’s light and I make it much milder than red salsa which makes it perfect to go along with grilled or steamed veggies. I’ve been known to sit down with a bowl full of steamed broccoli and this salsa. It is that good!

Now I’ll let you try it and decide for yourself, but I can almost guarantee you will like it.

Tomatillo Salsa

Ingredients

5 tomatillos

1 jalapeno, deseeded

1 lime

1/4 bunch fresh cilantro

Ingredients

Combine all of the ingredients in a high quality blender and blend until desired thickness. Serve with chips, tacos, or whatever you desire!
