Roasted Tomato Basil Soup (Vegan)

Oh how I love fall. With a chill in the air, we can finally start wearing fall clothes without sweating like a dog. Scarves, hats, jeans, it’s all game now! And not to mention the food. Pumpkin everything, mac and cheese, and soup!

I’ve been making so much soup this year and I’m pretty sure it is the been the best decision I’ve made. Now this soup here is probably one of my all time favorite soups ever. It’s rich and super creamy but it’s still vegan and super healthy. The trick to making it thick and creamy? Rice.

I learned this trick in one of my classes for gluten free cooking. Instead of making a roux or veloute, just add a little rice, overcook it, and puree. It creates a super thick, rich, and healthier option without the addition of butter or cream.

Is anyone else ready for cooler weather?

I mean, I’m all for the heat, but these 100+ days are starting to get to me. Yesterday I was driving home from class in the middle of the day and I swear I could not get home fast enough. As if driving home from a boring lecture doesn’t put you in a bad enough mood, add in suppressing heat, and you’re a road rage bomb just waiting to happen.

Caramelized Onion and Blue Cheese Tart

I swear i’m turning into a hypochondriac.
The last time I went to the dentist they told me my gums were receding a little on some of my teeth, and lately I swear it’s gotten worse. Gross I know.

They didn’t have any explanation why they were receding, they just are. Everything else was fine though.

I’m still excited about writing about the best breakfast tacos in Austin for the Austin City Guide! Ah, I feel so honored.
That being said though, I feel like I didn’t do it enough justice. Of course no matter what I do, or how good I do something, i’m always going to say that, as I am somewhat of a perfectionist. A lazy perfectionist.

Caramelized Onion Risotto with Gruyere

Has anyone been to Antonelli’s Cheese Shop here in Austin? Omg…
I went for the first time the other day with my mom… That store is dangerous. Although it’s small, they have so many different cheeses and products that are all so so good.
And the samples? The guy working there that day practically gave us a meals worth of free samples just trying to find ones we liked. Sample after sample her kept trying to figure out what we would like the best.
Friendly service, amazing cheese, and bourbon dulce de leche… I’m telling you it’s dangerous in there.

What a beautiful day it was here in Austin!
The sun was finally shining, it got up into the 60 degree range, oh a great change from the cold rainy days we’ve been having!
Don’t get me wrong, I love cold rainy days… just when I don’t have to go anywhere. I just want to hibernate in that sort of weather.
