Roasted Tomato Basil Soup (Vegan)

Oh how I love fall. With a chill in the air, we can finally start wearing fall clothes without sweating like a dog. Scarves, hats, jeans, it’s all game now! And not to mention the food. Pumpkin everything, mac and cheese, and soup!

I’ve been making so much soup this year and I’m pretty sure it is the been the best decision I’ve made. Now this soup here is probably one of my all time favorite soups ever. It’s rich and super creamy but it’s still vegan and super healthy. The trick to making it thick and creamy? Rice.

I learned this trick in one of my classes for gluten free cooking. Instead of making a roux or veloute, just add a little rice, overcook it, and puree. It creates a super thick, rich, and healthier option without the addition of butter or cream.

Tomatillo Salsa

Oh salsa. What is Texas without salsa? Dry tacos, nothing but cheese to dip your chip in, and nothing to add a little kick to your every meal.

Cherry Tomato and Goat Cheese Bruschetta

Bruschetta is probably one of my all time favorite comfort foods.

It’s got that bready carby deliciousness going on that is just so hard to resist. Even when I was little I absolutely loved this stuff. I remember going to one of my dads work parties and they had a plate of bruschetta sitting out. I’m pretty sure I ate that whole plate by myself and I was, lets see, probably 6 at the time.

Simplicity Wine Bar

Another Tuesday another dine out. Tonight’s restaurant? Simplicity Wine Bar on Burnet. This place is a “Tapas” style restaurant, serving small plates and wine for cheap prices. This place has many alcohol selections, but since of course I am underage I paid no attention to any of that.

We arrived at 5, dining in style with the  old people, and were the only ones in the restaurant. From the outside the place looks kinda sketchy, but don’t be scared just go on in! While nowhere near fancy, this place has a rustic/eco friendly/modern look, going for the recycled look but still classy. We were the first ones there, so when we walked in the staff were all sitting around the bar watching some Soccer game on the flatscreen, waiting for business to arrive.
You pick wherever you want to sit, either inside or out on a patio. We sat inside, as it was very humid that day and sitting outside sounded horrible. The waiter was very friendly, happy to answer any questions and our drinks arrived shortly. We first ordered the Escargot and Potato wedges from the starter menu.
